Ingredients

  • Fresh calamari - 300 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Water - 100 ml
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 500 ml (for frying)
  • Lemon wedges - 2 for serving
  • Tzatziki sauce - 100 grams for dipping

Steps

  1. Clean the calamari by removing the skin and insides, then cut them into rings about 1 cm thick.
  2. In a bowl, whisk together the flour, cornstarch, oregano, garlic powder, salt, and black pepper.
  3. In another bowl, beat the egg and mix in the water.
  4. Dip each calamari ring into the egg mixture, then coat thoroughly with the flour mixture.
  5. Heat the olive oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
  6. Fry the calamari in batches for about 2-3 minutes or until golden brown, ensuring not to overcrowd the pan.
  7. Remove the fried calamari with a slotted spoon and place them on paper towels to drain excess oil.
  8. Serve hot with lemon wedges and a side of tzatziki sauce for dipping.
