Ingredients

  • Artichokes - 2 medium
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Lemon - 1, cut into wedges

Steps

  1. Trim the artichokes by cutting off the top third and removing the tough outer leaves until you reach the tender inner leaves.
  2. Cut the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.
  3. Fill a pot with salted water and bring to a boil. Add the artichoke halves and blanch for about 5 minutes until slightly tender, then drain and let cool.
  4. In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, salt, and black pepper.
  5. Heat olive oil in a deep frying pan over medium heat.
  6. Dredge each artichoke half in the flour mixture, ensuring they are well-coated.
  7. Carefully place the coated artichokes in the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
  8. Remove the fried artichokes and place them on paper towels to drain excess oil.
  9. Serve hot with lemon wedges on the side for squeezing.
