Ingredients

  • Fresh anchovies - 250 grams
  • All-purpose flour - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 200 milliliters (for frying)
  • Lemon wedges - 1 for serving
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. Clean the fresh anchovies by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
  2. In a shallow dish, combine the all-purpose flour, salt, black pepper, garlic powder, and paprika.
  3. Dredge each anchovy in the seasoned flour, shaking off any excess flour.
  4. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  5. Carefully add the floured anchovies to the hot oil in batches, making sure not to overcrowd the pan.
  6. Fry the anchovies for about 2-3 minutes on each side, or until they are golden brown and crispy.
  7. Using a slotted spoon, transfer the fried anchovies to a plate lined with paper towels to drain excess oil.
  8. Serve the fried anchovies hot, garnished with chopped parsley and lemon wedges on the side.
