Steps
- Clean the fresh anchovies by removing the heads and guts, then rinse them under cold water and pat dry with paper towels.
- In a shallow dish, combine the all-purpose flour, salt, black pepper, garlic powder, and paprika.
- Dredge each anchovy in the seasoned flour, shaking off any excess flour.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Carefully add the floured anchovies to the hot oil in batches, making sure not to overcrowd the pan.
- Fry the anchovies for about 2-3 minutes on each side, or until they are golden brown and crispy.
