- pitted dates - 100 grams
- walnuts - 50 grams
- almond flour - 50 grams
- ground cinnamon - 1 teaspoon
- ground cloves - 1/4 teaspoon
- vanilla extract - 1 teaspoon
- olive oil - 2 tablespoons
- baking powder - 1/2 teaspoon
- salt - a pinch
- water - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a food processor, combine the pitted dates, walnuts, almond flour, cinnamon, cloves, vanilla extract, olive oil, baking powder, and salt.
- Pulse until the mixture is well combined and forms a sticky dough. If needed, add water a tablespoon at a time until the dough holds together.
- Scoop out small amounts of dough and shape them into oval cookies, placing them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden.
- Remove from the oven and let cool on a wire rack before serving.
