  • pitted dates - 100 grams
  • walnuts - 50 grams
  • almond flour - 50 grams
  • ground cinnamon - 1 teaspoon
  • ground cloves - 1/4 teaspoon
  • vanilla extract - 1 teaspoon
  • olive oil - 2 tablespoons
  • baking powder - 1/2 teaspoon
  • salt - a pinch
  • water - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a food processor, combine the pitted dates, walnuts, almond flour, cinnamon, cloves, vanilla extract, olive oil, baking powder, and salt.
  3. Pulse until the mixture is well combined and forms a sticky dough. If needed, add water a tablespoon at a time until the dough holds together.
  4. Scoop out small amounts of dough and shape them into oval cookies, placing them on the prepared baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden.
  6. Remove from the oven and let cool on a wire rack before serving.
