Ingredients

  • Red bell peppers - 2 large
  • Feta cheese - 150 grams, crumbled
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half lengthwise and remove the seeds and membranes.
  3. In a bowl, combine the crumbled feta cheese, olive oil, dried oregano, garlic powder, black pepper, chopped parsley, and toasted pine nuts.
  4. Spoon the feta mixture generously into each half of the bell peppers.
  5. Place the stuffed peppers on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20 minutes, until the peppers are tender and the feta is slightly golden.
