Ingredients

  • Firm tofu - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cucumber - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Kalamata olives - 100 grams, pitted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Press the firm tofu between paper towels to remove excess moisture for about 10 minutes.
  2. Crumble the pressed tofu into a bowl and add nutritional yeast, lemon juice, dried oregano, garlic powder, salt, and black pepper. Mix well until the tofu resembles a feta cheese texture.
  3. In a separate bowl, combine sliced cucumber, halved cherry tomatoes, and pitted Kalamata olives. Drizzle with olive oil and toss gently to combine.
