- Firm tofu - 200 grams
- Nutritional yeast - 2 tablespoons

- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cucumber - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
- Kalamata olives - 100 grams, pitted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Press the firm tofu between paper towels to remove excess moisture for about 10 minutes.
- Crumble the pressed tofu into a bowl and add nutritional yeast, lemon juice, dried oregano, garlic powder, salt, and black pepper. Mix well until the tofu resembles a feta cheese texture.
- In a separate bowl, combine sliced cucumber, halved cherry tomatoes, and pitted Kalamata olives. Drizzle with olive oil and toss gently to combine.
