Ingredients

  • 2 large bell peppers (any color)
  • 150 grams feta cheese, crumbled
  • 100 grams cooked quinoa
  • 50 grams cherry tomatoes, diced
  • 30 grams black olives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Steps

  1. Preheat the grill or BBQ to medium heat.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the crumbled feta cheese, cooked quinoa, diced cherry tomatoes, chopped black olives, fresh parsley, olive oil, dried oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  4. Stuff each bell pepper with the feta mixture, packing it down gently.
  5. Place the stuffed peppers upright on the grill and cook for about 20 minutes, or until the peppers are tender and slightly charred.
  6. Remove from the grill and let them cool slightly before serving.
