Ingredients

  • Cauliflower rice - 300 grams
  • Feta cheese - 100 grams, crumbled

  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 100 grams, fresh
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the cauliflower rice and cook for another 5-7 minutes until tender.
  4. Add the halved cherry tomatoes and fresh spinach, cooking until the spinach has wilted, about 2-3 minutes.
  5. Stir in the crumbled feta cheese, dried oregano, chopped parsley, salt, and black pepper, mixing well to combine.
  6. Cook for an additional 2 minutes, allowing the cheese to soften slightly.
