Ingredients

  • Feta cheese - 200 grams
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Bell pepper - 1 medium, chopped
  • Red onion - 1 small, sliced
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a baking dish, place the feta cheese in the center and drizzle with 1 tablespoon of olive oil.
  3. Arrange the cherry tomatoes, bell pepper, and red onion around the feta.
  4. Sprinkle the dried oregano, thyme, and black pepper over the vegetables and feta.
  5. Drizzle the remaining tablespoon of olive oil and lemon juice over the top.
  6. Bake in the preheated oven for 20 minutes, or until the feta is soft and slightly golden.
  7. Remove from the oven and let it cool for a few minutes.
  8. Garnish with fresh parsley before serving.
