- Cherry tomatoes - 150 grams, halved
- Bell pepper - 1 medium, chopped
- Red onion - 1 small, sliced
- Oregano - 1 teaspoon, dried
- Thyme - 1 teaspoon, dried
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a baking dish, place the feta cheese in the center and drizzle with 1 tablespoon of olive oil.
- Arrange the cherry tomatoes, bell pepper, and red onion around the feta.
- Sprinkle the dried oregano, thyme, and black pepper over the vegetables and feta.
- Drizzle the remaining tablespoon of olive oil and lemon juice over the top.
- Bake in the preheated oven for 20 minutes, or until the feta is soft and slightly golden.
- Remove from the oven and let it cool for a few minutes.
- Garnish with fresh parsley before serving.
