- Filo pastry - 4 sheets
- Feta cheese - 150 grams, crumbled
- Ricotta cheese - 100 grams
- Egg - 1 large
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons, for brushing
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (390°F).
- In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, egg, dill, parsley, salt, and black pepper. Mix until well combined.
- Lay one sheet of filo pastry on a clean surface and brush lightly with olive oil. Place a second sheet on top and brush with olive oil again.
- Cut the layered filo pastry into rectangles of about 10x15 cm.
- Place a spoonful of the cheese mixture at one end of each rectangle and fold the sides over the filling. Roll the pastry tightly to form a pie.
- Place the rolled pies seam-side down on a baking sheet lined with parchment paper.
- Brush the tops of the pies with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
