Feta Pie
Feta Pie is a deliciously savory Greek dish made with layers of gluten-free phyllo dough filled with creamy feta cheese and fresh herbs. It’s perfect for a light dinner or as a stunning appetizer for any gathering.

Ingredients
- Gluten-free phyllo pastry - 200 grams
- Feta cheese - 150 grams, crumbled
- Ricotta cheese - 100 grams
- Eggs - 2 large
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 4 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine crumbled feta cheese, ricotta cheese, eggs, chopped dill, chopped parsley, salt, and black pepper. Mix until well combined.
- Lay out the gluten-free phyllo pastry sheets, brushing each sheet with olive oil before layering them in a greased 20 cm (8 inch) round baking dish, allowing the edges to hang over the sides.
- Once you have 5-6 layers of phyllo, spread half of the cheese mixture evenly over the pastry.
- Layer 3-4 additional sheets of phyllo on top of the cheese mixture, brushing each with olive oil.
- Spread the remaining cheese mixture on top, then fold the overhanging phyllo sheets over the top of the pie.
- Brush the top of the pie with additional olive oil and cut a few slits in the top to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
