Ingredients

  • Gluten-free phyllo pastry - 200 grams
  • Feta cheese - 150 grams, crumbled
  • Ricotta cheese - 100 grams
  • Eggs - 2 large
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 4 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine crumbled feta cheese, ricotta cheese, eggs, chopped dill, chopped parsley, salt, and black pepper. Mix until well combined.
  3. Lay out the gluten-free phyllo pastry sheets, brushing each sheet with olive oil before layering them in a greased 20 cm (8 inch) round baking dish, allowing the edges to hang over the sides.
  4. Once you have 5-6 layers of phyllo, spread half of the cheese mixture evenly over the pastry.
  5. Layer 3-4 additional sheets of phyllo on top of the cheese mixture, brushing each with olive oil.
  6. Spread the remaining cheese mixture on top, then fold the overhanging phyllo sheets over the top of the pie.
  7. Brush the top of the pie with additional olive oil and cut a few slits in the top to allow steam to escape.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
