Ingredients

  • Whole wheat pasta - 200 grams
  • Feta cheese - 150 grams, crumbled
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red pepper flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
  6. Crumble the feta cheese over the pasta, add lemon juice, and toss everything together. If the mixture seems dry, gradually add reserved pasta water until you reach the desired consistency.
  7. Finish by stirring in the chopped fresh basil and serve immediately.
