- Whole wheat pasta - 200 grams
- Feta cheese - 150 grams, crumbled
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red pepper flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 5 leaves, chopped
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
- Crumble the feta cheese over the pasta, add lemon juice, and toss everything together. If the mixture seems dry, gradually add reserved pasta water until you reach the desired consistency.
- Finish by stirring in the chopped fresh basil and serve immediately.
