Ingredients

  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Fresh spinach - 50 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, crack the eggs and whisk them together until well combined. Add a pinch of salt and black pepper.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the chopped spinach and halved cherry tomatoes to the skillet, sautéing for about 2-3 minutes until the spinach is wilted.
  4. Pour the whisked eggs into the skillet, ensuring they cover the vegetables evenly.
  5. Sprinkle the crumbled feta cheese and chopped parsley over the top of the eggs.
  6. Cook for about 4-5 minutes, gently lifting the edges of the omelette with a spatula to allow uncooked egg to flow to the edges.
  7. Once the bottom is set and the top is slightly runny, fold the omelette in half and cook for another 1-2 minutes until fully set.
  8. Slide the omelette onto a plate, cut in half, and serve warm.
