Ingredients

  • Cucumber - 1 medium, grated
  • Almond yogurt - 200 grams (unsweetened)
  • Garlic - 1 clove, minced
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to avoid a watery dip.
  2. In a mixing bowl, combine the grated cucumber, almond yogurt, minced garlic, chopped dill, lemon juice, olive oil, salt, and black pepper.
  3. Stir the mixture until well combined and adjust seasoning to taste.
  4. Let the tzatziki sit in the refrigerator for at least 10 minutes to allow the flavors to meld together.
  5. Serve chilled as a dip with pita bread or fresh vegetables, or as a topping for your favorite brunch dishes.
