- phyllo dough - 6 sheets
- fresh spinach - 200 grams, chopped
- red onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- nutritional yeast - 3 tablespoons
- toasted walnuts - 50 grams, chopped
- fresh dill - 2 tablespoons, chopped
- fresh parsley - 2 tablespoons, chopped
- olive oil - 3 tablespoons
- lemon juice - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, then add the chopped spinach. Cook until the spinach is wilted and any moisture has evaporated, about 4-5 minutes. Remove from heat.
- In a mixing bowl, combine the cooked spinach mixture with nutritional yeast, chopped walnuts, dill, parsley, lemon juice, salt, and pepper. Mix until well combined.
- Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with a third sheet.
- Spoon half of the spinach mixture along one edge of the phyllo dough, leaving some space at the sides. Fold the edges over the filling and roll the phyllo tightly to form a log. Repeat with the remaining phyllo sheets and filling.
- Place the rolls on a baking sheet lined with parchment paper. Brush the tops with olive oil.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Allow to cool slightly before slicing. Serve warm.
