- Phyllo pastry - 4 sheets
- Feta cheese - 200 grams, crumbled
- Ricotta cheese - 100 grams
- Eggs - 2 large
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the crumbled feta, ricotta cheese, eggs, dill, parsley, salt, and black pepper. Mix until well combined.
- Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with more olive oil.
- Spread half of the cheese mixture along one edge of the phyllo, leaving a 2-inch border. Carefully roll the phyllo over the filling to form a log.
- Place the rolled phyllo on a greased baking sheet, seam side down. Brush the top with olive oil.
- Repeat the process with the remaining phyllo sheets and cheese mixture.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
- Remove from the oven and allow to cool slightly before slicing. Serve warm.
