Ingredients

  • Phyllo pastry - 4 sheets
  • Feta cheese - 200 grams, crumbled
  • Ricotta cheese - 100 grams
  • Eggs - 2 large
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the crumbled feta, ricotta cheese, eggs, dill, parsley, salt, and black pepper. Mix until well combined.
  3. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with more olive oil.
  4. Spread half of the cheese mixture along one edge of the phyllo, leaving a 2-inch border. Carefully roll the phyllo over the filling to form a log.
  5. Place the rolled phyllo on a greased baking sheet, seam side down. Brush the top with olive oil.
  6. Repeat the process with the remaining phyllo sheets and cheese mixture.
  7. Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
  8. Remove from the oven and allow to cool slightly before slicing. Serve warm.
