  • Fresh parsley - 2 tablespoons, chopped

  • Black pepper - to taste

Steps

  1. In a bowl, crack the eggs and whisk them until well combined. Add a pinch of salt and black pepper to taste.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet, tilting the pan to ensure the eggs cover the surface evenly.
