Ingredients

  • Feta cheese - 200 grams
  • Cherry tomatoes - 200 grams
  • Zucchini - 1 medium (about 200 grams)
  • Bell pepper (red or yellow) - 1 medium (about 150 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Oregano (dried) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a baking dish, combine the halved cherry tomatoes, diced zucchini, and chopped bell pepper.
  3. In a small bowl, mix the olive oil, minced garlic, oregano, salt, and black pepper.
  4. Drizzle the olive oil mixture over the vegetables and toss to coat evenly.
