Ingredients
- 2 Chicken breasts - 300 grams
- 100 grams Feta cheese, crumbled
- 100 grams Fresh spinach, chopped
- 2 tablespoons Olive oil
- 1 clove Garlic, minced
- 1 teaspoon Dried oregano
- Salt - to taste
- Pepper - to taste
- 1 tablespoon Fresh lemon juice
- Toothpicks or kitchen twine - for securing
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the wilted spinach, crumbled feta cheese, dried oregano, lemon juice, salt, and pepper. Mix well to create the filling.
- Pat the chicken breasts dry with paper towels and make a pocket in each breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and feta mixture, securing the opening with toothpicks or kitchen twine.
- Heat the remaining olive oil in the skillet and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 75°C (165°F).
- Remove from the oven, let rest for a few minutes, then slice and serve.
