Ingredients

  • 2 Chicken breasts - 300 grams
  • 100 grams Feta cheese, crumbled
  • 100 grams Fresh spinach, chopped
  • 2 tablespoons Olive oil
  • 1 clove Garlic, minced
  • 1 teaspoon Dried oregano
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon Fresh lemon juice
  • Toothpicks or kitchen twine - for securing

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the wilted spinach, crumbled feta cheese, dried oregano, lemon juice, salt, and pepper. Mix well to create the filling.
  5. Pat the chicken breasts dry with paper towels and make a pocket in each breast by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the spinach and feta mixture, securing the opening with toothpicks or kitchen twine.
  7. Heat the remaining olive oil in the skillet and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  8. Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 75°C (165°F).
  9. Remove from the oven, let rest for a few minutes, then slice and serve.
