Ingredients
- Fresh spinach - 150 grams
- Feta cheese - 100 grams, crumbled
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Puff pastry sheets - 2 sheets (low-carb if available)
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the crumbled feta cheese, cooked spinach, almond flour, egg, oregano, salt, and black pepper. Mix until well combined.
- Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.
- Place a spoonful of the spinach and feta mixture in the center of each pastry square.
- Fold the pastry over the filling to form a triangle and seal the edges by pressing with a fork.
- Place the rolls on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
