Ingredients

  • Fresh spinach - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Puff pastry sheets - 2 sheets (low-carb if available)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the crumbled feta cheese, cooked spinach, almond flour, egg, oregano, salt, and black pepper. Mix until well combined.
  5. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.
  6. Place a spoonful of the spinach and feta mixture in the center of each pastry square.
  7. Fold the pastry over the filling to form a triangle and seal the edges by pressing with a fork.
  8. Place the rolls on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving.
