Ingredients

  • Phyllo pastry - 4 sheets
  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Egg - 1 large
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed spinach and onion mixture with the crumbled feta cheese, egg, salt, black pepper, oregano, and lemon juice. Mix well until all ingredients are evenly combined.
  5. Take one sheet of phyllo pastry and lay it on a clean surface. Brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
  6. Spoon half of the spinach and feta mixture onto the center of the phyllo layers. Fold the sides over the filling and roll it up into a log shape, sealing the edges with a bit of water if necessary.
  7. Repeat the process with the remaining phyllo sheets and filling to create a second pie.
  8. Place the pies on a baking tray lined with parchment paper and brush the tops with olive oil.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  10. Remove from the oven, let cool for a few minutes, then slice and serve warm.
