- Phyllo pastry - 4 sheets
- Fresh spinach - 200 grams
- Feta cheese - 100 grams, crumbled
- Egg - 1 large
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed spinach and onion mixture with the crumbled feta cheese, egg, salt, black pepper, oregano, and lemon juice. Mix well until all ingredients are evenly combined.
- Take one sheet of phyllo pastry and lay it on a clean surface. Brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
- Spoon half of the spinach and feta mixture onto the center of the phyllo layers. Fold the sides over the filling and roll it up into a log shape, sealing the edges with a bit of water if necessary.
- Repeat the process with the remaining phyllo sheets and filling to create a second pie.
- Place the pies on a baking tray lined with parchment paper and brush the tops with olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
