- Fresh spinach - 200 grams
- Feta cheese - 150 grams, crumbled
- Almond flour - 100 grams
- Eggs - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mozzarella cheese - 50 grams, shredded
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the almond flour, eggs, oregano, salt, and black pepper. Mix until a dough forms.
- Grease a baking dish with the remaining tablespoon of olive oil. Press the dough mixture into the bottom of the dish to form a crust.
- Spread the cooked spinach evenly over the crust, followed by crumbled feta cheese.
- Sprinkle shredded mozzarella cheese on top of the feta and spinach.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and golden.
- Let cool for a few minutes before slicing and serving.
