Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 150 grams, crumbled
  • Almond flour - 100 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese - 50 grams, shredded

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the almond flour, eggs, oregano, salt, and black pepper. Mix until a dough forms.
  5. Grease a baking dish with the remaining tablespoon of olive oil. Press the dough mixture into the bottom of the dish to form a crust.
  6. Spread the cooked spinach evenly over the crust, followed by crumbled feta cheese.
  7. Sprinkle shredded mozzarella cheese on top of the feta and spinach.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and golden.
  9. Let cool for a few minutes before slicing and serving.
