  • Cucumber - 1 medium, diced

  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large mixing bowl, combine the drained chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, and chopped parsley.
