Ingredients

  • Cauliflower Rice - 300 grams
  • Fennel Bulb - 1 medium, finely chopped

  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Vegetable Broth - 250 ml
  • Fresh Dill - 2 tablespoons, chopped
  • Lemon Juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the chopped fennel and cook for an additional 5 minutes until softened.
  4. Add the cauliflower rice to the skillet, mixing well with the fennel and onion mixture.
  5. Pour in the vegetable broth and bring to a simmer, covering the skillet and cooking for about 10 minutes until the cauliflower is tender.
  6. Stir in the fresh dill, lemon juice, salt, and black pepper, cooking for another 2 minutes.
