- Fennel bulbs - 2 medium, chopped
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Spinach - 150 grams, fresh or frozen
- Feta cheese - 100 grams, crumbled
- Eggs - 2 large
- Milk - 50 ml
- Pastry dough - 250 grams
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Oregano - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the chopped fennel and continue to sauté for about 5-7 minutes until softened.
- Stir in the spinach and cook until wilted, then remove from heat and let cool slightly.
- In a bowl, whisk together the eggs, milk, salt, black pepper, and oregano.
- Mix the cooled fennel and spinach mixture with the crumbled feta cheese, then combine with the egg mixture.
- Roll out the pastry dough and line a greased pie dish with it, leaving some overhang.
- Pour the fennel and egg mixture into the pastry-lined dish, then fold the overhanging pastry over the filling.
- Bake in the preheated oven for 30 minutes or until the pastry is golden brown and the filling is set.
- Allow to cool for a few minutes before slicing and serving.
