Ingredients

  • Fennel bulbs - 2 medium, chopped
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Spinach - 150 grams, fresh or frozen
  • Feta cheese - 100 grams, crumbled
  • Eggs - 2 large
  • Milk - 50 ml
  • Pastry dough - 250 grams
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Oregano - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the chopped fennel and continue to sauté for about 5-7 minutes until softened.
  4. Stir in the spinach and cook until wilted, then remove from heat and let cool slightly.
  5. In a bowl, whisk together the eggs, milk, salt, black pepper, and oregano.
  6. Mix the cooled fennel and spinach mixture with the crumbled feta cheese, then combine with the egg mixture.
  7. Roll out the pastry dough and line a greased pie dish with it, leaving some overhang.
  8. Pour the fennel and egg mixture into the pastry-lined dish, then fold the overhanging pastry over the filling.
  9. Bake in the preheated oven for 30 minutes or until the pastry is golden brown and the filling is set.
  10. Allow to cool for a few minutes before slicing and serving.
