Ingredients

  • Fresh mint leaves - 10g, chopped
  • Feta cheese - 50g, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Trim the fennel bulb, removing the stalks and fronds, and slice it thinly using a mandoline or sharp knife.
  2. Peel the orange using a knife, removing the white pith, and cut it into segments, discarding any seeds.
  3. In a large bowl, combine the sliced fennel and orange segments.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the fennel and orange mixture and toss gently to combine.
