- Yellow split peas - 150 grams
- Water - 500 ml
- Olive oil - 3 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Rinse the yellow split peas under cold water and drain.
- In a medium saucepan, combine the yellow split peas and water. Bring to a boil over medium heat.
- Reduce the heat to low and simmer for about 30 minutes, or until the peas are soft and tender.
- In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Once the split peas are cooked, drain any excess water and transfer them to a food processor.
- Add the sautéed onion and garlic, lemon juice, salt, black pepper, and paprika to the food processor. Blend until smooth.
- Drizzle in the remaining tablespoon of olive oil while blending to achieve a creamy consistency.
- Taste and adjust seasoning if necessary.
- Transfer the fava dip to a serving bowl, garnish with chopped parsley, and serve with pita bread or vegetable sticks.
