- Yellow split peas - 100 grams
- Water - 500 ml
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1/2 teaspoon (optional)
Steps
- Rinse the yellow split peas under cold water and drain them.
- In a medium saucepan, combine the yellow split peas and water. Bring to a boil over medium heat.
- Reduce the heat to low, cover, and simmer for about 25-30 minutes or until the peas are soft and have absorbed most of the water.
- Remove from heat and let cool slightly, then transfer the mixture to a food processor.
- Add the minced garlic, olive oil, lemon juice, salt, black pepper, and paprika (if using) to the food processor.
- Blend until smooth and creamy, adding a little water if necessary to reach your desired consistency.
- Taste and adjust seasoning if needed, then transfer the fava spread to a serving bowl.
- Drizzle with additional olive oil and sprinkle with chopped parsley before serving.
