Ingredients

  • Yellow split peas - 100 grams
  • Water - 500 ml
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon (optional)

Steps

  1. Rinse the yellow split peas under cold water and drain them.
  2. In a medium saucepan, combine the yellow split peas and water. Bring to a boil over medium heat.
  3. Reduce the heat to low, cover, and simmer for about 25-30 minutes or until the peas are soft and have absorbed most of the water.
  4. Remove from heat and let cool slightly, then transfer the mixture to a food processor.
  5. Add the minced garlic, olive oil, lemon juice, salt, black pepper, and paprika (if using) to the food processor.
  6. Blend until smooth and creamy, adding a little water if necessary to reach your desired consistency.
  7. Taste and adjust seasoning if needed, then transfer the fava spread to a serving bowl.
  8. Drizzle with additional olive oil and sprinkle with chopped parsley before serving.
