Ingredients

  • Yellow split peas - 150 grams
  • Water - 1 liter
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the yellow split peas under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the rinsed split peas, salt, and black pepper to the pot. Pour in the water, bring to a boil, then reduce the heat to low and cover. Simmer for about 25-30 minutes, or until the peas are soft.
  4. Once cooked, remove the pot from heat and let it cool slightly. Use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup.
  5. Stir in the lemon juice, then taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley and a drizzle of olive oil.
