Ingredients
- Yellow split peas - 150 grams
- Water - 1 liter
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the yellow split peas under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the rinsed split peas, salt, and black pepper to the pot. Pour in the water, bring to a boil, then reduce the heat to low and cover. Simmer for about 25-30 minutes, or until the peas are soft.
- Once cooked, remove the pot from heat and let it cool slightly. Use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the lemon juice, then taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley and a drizzle of olive oil.
