Ingredients

  • Yellow split peas - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons, plus more for drizzling
  • Vegetable broth - 500 ml
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Capers - 2 tablespoons, rinsed (optional)

Steps

  1. Rinse the yellow split peas under cold water and drain well.
  2. In a medium saucepan, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until translucent.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the rinsed split peas, vegetable broth, salt, and black pepper to the saucepan. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 30 minutes, or until the peas are soft and tender.
  5. Once cooked, remove from heat and let it cool slightly. Then, transfer the mixture to a blender or use an immersion blender to puree until smooth and creamy. If the mixture is too thick, add a little more vegetable broth or water to reach your desired consistency.
  6. Stir in the lemon juice and adjust seasoning as needed.
  7. Serve the fava puree in bowls, drizzled with additional olive oil and topped with chopped parsley and capers if desired.
