- Yellow split peas - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chopped fresh parsley - 2 tablespoons (for garnish)
Steps
- Rinse the yellow split peas under cold water until the water runs clear.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.
- Add the minced garlic to the pan and cook for an additional 1-2 minutes, stirring frequently to avoid burning.
- Add the rinsed yellow split peas to the saucepan, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer uncovered for about 25-30 minutes, or until the peas are soft.
- Once the peas are cooked, remove from heat and blend the mixture using an immersion blender or transfer to a food processor until smooth and creamy.
- Stir in the lemon juice, and season with salt and black pepper to taste.
- Transfer the fava to a serving bowl, drizzle with the remaining tablespoon of olive oil, and garnish with chopped parsley.
- Serve warm or at room temperature with pita bread or fresh vegetables.
