Ingredients

  • Yellow split peas - 100 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Koulouri (sesame bread rings) - 2 pieces
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Rinse the yellow split peas under cold water and drain well.
  2. In a medium saucepan, combine the rinsed split peas and water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for about 20 minutes, or until the peas are soft and breaking apart.
  4. In a separate skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  6. Once the split peas are cooked, drain any excess water and add them to the skillet with the onion and garlic. Stir to combine.
  7. Add the lemon juice, salt, and black pepper to the mixture. Mash the fava beans with a fork or potato masher until smooth and creamy.
  8. Toast the koulouri (sesame bread rings) in a toaster or oven until golden brown.
  9. Serve the fava bean puree warm, drizzled with a little extra olive oil and garnished with chopped parsley, alongside the toasted koulouri.
