- Yellow split peas - 100 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Koulouri (sesame bread rings) - 2 pieces
- Fresh parsley - 1 tablespoon, chopped
Steps
- Rinse the yellow split peas under cold water and drain well.
- In a medium saucepan, combine the rinsed split peas and water. Bring to a boil over medium heat.
- Reduce the heat and simmer for about 20 minutes, or until the peas are soft and breaking apart.
- In a separate skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Once the split peas are cooked, drain any excess water and add them to the skillet with the onion and garlic. Stir to combine.
- Add the lemon juice, salt, and black pepper to the mixture. Mash the fava beans with a fork or potato masher until smooth and creamy.
- Toast the koulouri (sesame bread rings) in a toaster or oven until golden brown.
- Serve the fava bean puree warm, drizzled with a little extra olive oil and garnished with chopped parsley, alongside the toasted koulouri.
