- Yellow split peas - 100 grams
- Water - 500 milliliters
- Olive oil - 3 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the yellow split peas under cold water until the water runs clear.
- In a pot, combine the split peas and water. Bring to a boil over medium heat.
- Reduce the heat to low and simmer for about 20 minutes, or until the peas are soft.
- Drain any excess water and transfer the split peas to a mixing bowl.
- Add the olive oil, minced garlic, lemon juice, salt, black pepper, and cumin to the bowl.
- Using a fork or immersion blender, mash or blend the mixture until smooth and creamy.
- Taste and adjust seasoning if necessary, then stir in the chopped parsley.
- Serve the fava dip warm or at room temperature with pita bread or fresh vegetables.
