Ingredients

  • Yellow split peas - 100 grams
  • Water - 500 milliliters
  • Olive oil - 3 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the yellow split peas under cold water until the water runs clear.
  2. In a pot, combine the split peas and water. Bring to a boil over medium heat.
  3. Reduce the heat to low and simmer for about 20 minutes, or until the peas are soft.
  4. Drain any excess water and transfer the split peas to a mixing bowl.
  5. Add the olive oil, minced garlic, lemon juice, salt, black pepper, and cumin to the bowl.
  6. Using a fork or immersion blender, mash or blend the mixture until smooth and creamy.
  7. Taste and adjust seasoning if necessary, then stir in the chopped parsley.
  8. Serve the fava dip warm or at room temperature with pita bread or fresh vegetables.
