Ingredients

  • Dried fava beans - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Tahini - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 500 ml

Steps

  1. Rinse the dried fava beans under cold water and soak them in a bowl with plenty of water for at least 6 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with 500 ml of fresh water. Bring to a boil, then reduce the heat to a simmer and cook for about 30-40 minutes or until the beans are tender.
  3. Once cooked, drain the beans and let them cool slightly.
  4. In a food processor, combine the cooked fava beans, minced garlic, olive oil, lemon juice, tahini, cumin, salt, and black pepper. Blend until smooth and creamy, adding a little water if necessary to achieve the desired consistency.
  5. Taste and adjust seasoning if needed. Transfer the spread to a serving bowl and garnish with chopped fresh parsley.
  6. Serve with warm pita bread or crusty bread for dipping.
