Ingredients

  • Fava beans - 200 grams (dried)
  • Olive oil - 2 tablespoons

  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Vegetable broth - 800 milliliters
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon

Steps

  1. Rinse the fava beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until beans are tender.
  3. In a separate pan, heat olive oil over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5-7 minutes.
  4. Add minced garlic and cumin to the sautéed vegetables, cooking for an additional 1-2 minutes until fragrant.
  5. Once the fava beans are cooked, combine them with the sautéed vegetables in the pot. Use an immersion blender to blend the soup until smooth, adding more broth if necessary for desired consistency.
  6. Stir in lemon juice, salt, and black pepper. Simmer for another 5 minutes to allow flavors to meld.
  7. Serve hot, garnished with fresh parsley.
