Ingredients

  • Dried fava beans - 200 grams
  • Garlic - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 600 milliliters

Steps

  1. Rinse the dried fava beans under cold water and soak them in a bowl with plenty of water for at least 4 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with 600 ml of fresh water.
  3. Add the garlic cloves to the pot and bring to a boil over medium heat.
  4. Once boiling, reduce the heat to low and simmer for about 30-40 minutes, or until the fava beans are tender.
  5. Drain the fava beans and garlic, and transfer them to a food processor.
  6. Add lemon juice, olive oil, salt, and black pepper to the food processor.
  7. Blend until smooth, adding a little water if necessary to achieve the desired consistency.
  8. Taste and adjust seasoning if needed, then stir in the chopped parsley.
  9. Transfer the fava bean puree to a serving bowl and drizzle with additional olive oil before serving.
