Ingredients
- Dried fava beans - 200 grams
- Garlic - 2 cloves
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 600 milliliters
Steps
- Rinse the dried fava beans under cold water and soak them in a bowl with plenty of water for at least 4 hours or overnight.
- Drain the soaked fava beans and place them in a pot with 600 ml of fresh water.
- Add the garlic cloves to the pot and bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 30-40 minutes, or until the fava beans are tender.
- Drain the fava beans and garlic, and transfer them to a food processor.
- Add lemon juice, olive oil, salt, and black pepper to the food processor.
- Blend until smooth, adding a little water if necessary to achieve the desired consistency.
- Taste and adjust seasoning if needed, then stir in the chopped parsley.
- Transfer the fava bean puree to a serving bowl and drizzle with additional olive oil before serving.
