Steps
- Rinse the yellow split peas under cold water until the water runs clear.
- In a pot, combine the rinsed split peas and water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 25-30 minutes or until the peas are tender.
- Drain any excess water and transfer the cooked peas into a food processor.
- Add olive oil, lemon juice, minced garlic, salt, and black pepper to the food processor.
- Blend until smooth and creamy, adjusting the consistency with a little water if necessary.
