Ingredients

  • Yellow split peas - 150 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the yellow split peas under cold water until the water runs clear.
  2. In a pot, combine the rinsed split peas and water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 25-30 minutes or until the peas are tender.
  4. Drain any excess water and transfer the cooked peas into a food processor.
  5. Add olive oil, lemon juice, minced garlic, salt, and black pepper to the food processor.
  6. Blend until smooth and creamy, adjusting the consistency with a little water if necessary.
  7. Taste and adjust seasoning if needed.
  8. Serve warm or at room temperature, garnished with fresh parsley.
