Ingredients

  • Dried fava beans - 150 grams
  • Garlic - 2 cloves
  • Fresh lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 500 ml

Steps

  1. Rinse the dried fava beans under cold water and soak them in plenty of water for at least 6 hours or overnight.
  2. Drain and rinse the soaked fava beans, then place them in a pot with 500 ml of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer for about 30 minutes or until the fava beans are soft.
  4. Once cooked, drain the fava beans and let them cool slightly.
  5. In a food processor, combine the cooked fava beans, garlic, lemon juice, olive oil, salt, and black pepper.
  6. Blend until smooth and creamy, adjusting the consistency with a little water if necessary.
  7. Stir in the chopped parsley and mix well.
  8. Serve the dip in a bowl, drizzled with a little extra olive oil and a sprinkle of parsley on top, alongside warm pita bread or fresh vegetables.
