- Dried fava beans - 150 grams
- Garlic - 2 cloves
- Fresh lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 500 ml
Steps
- Rinse the dried fava beans under cold water and soak them in plenty of water for at least 6 hours or overnight.
- Drain and rinse the soaked fava beans, then place them in a pot with 500 ml of fresh water.
- Bring the water to a boil, then reduce the heat and simmer for about 30 minutes or until the fava beans are soft.
- Once cooked, drain the fava beans and let them cool slightly.
- In a food processor, combine the cooked fava beans, garlic, lemon juice, olive oil, salt, and black pepper.
- Blend until smooth and creamy, adjusting the consistency with a little water if necessary.
- Stir in the chopped parsley and mix well.
- Serve the dip in a bowl, drizzled with a little extra olive oil and a sprinkle of parsley on top, alongside warm pita bread or fresh vegetables.
