  • Quinoa - 50 grams, cooked
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat breadcrumbs - 50 grams
  • Lettuce leaves - 2 pieces for serving
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced

Steps

  1. In a large mixing bowl, combine the mashed fava beans, cooked quinoa, chopped red onion, minced garlic, chopped parsley, dried oregano, ground cumin, lemon juice, olive oil, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined.
  3. Gradually add the whole wheat breadcrumbs to the mixture until it reaches a consistency that can be formed into patties.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat a non-stick skillet over medium heat and lightly grease with olive oil.
  6. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
