Ingredients

  • Yellow split peas - 150 grams
  • Water - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the yellow split peas under cold water and drain.
  2. In a medium saucepan, combine the rinsed split peas and 500 ml of water. Bring to a boil over medium heat.
  3. Reduce the heat to low, cover, and simmer for 25-30 minutes until the peas are soft and tender.
  4. While the peas are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  6. Once the peas are cooked, drain any excess water and add them to the skillet with the onions and garlic. Stir to combine.
  7. Using a potato masher or an immersion blender, puree the mixture until smooth. If needed, add a little water to reach your desired consistency.
  8. Season the fava with salt and black pepper to taste. Stir in the lemon juice.
  9. Serve warm, drizzled with extra olive oil and garnished with chopped fresh parsley.
