Fava is a traditional Greek dish made from split yellow peas, blended into a smooth puree and served with a drizzle of olive oil and fresh lemon juice. This hearty and nutritious breakfast is perfect for starting your day with a boost of protein and fiber.

Ingredients
- Yellow split peas - 150 grams
- Water - 500 ml
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Salt - 1 teaspoon
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the yellow split peas under cold water and drain.
- In a medium saucepan, combine the rinsed split peas and 500 ml of water. Bring to a boil over medium heat.
- Reduce the heat to low, cover, and simmer for 25-30 minutes until the peas are soft and tender.
- While the peas are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Once the peas are cooked, drain any excess water and add them to the skillet with the onions and garlic. Stir to combine.
- Using a potato masher or an immersion blender, puree the mixture until smooth. If needed, add a little water to reach your desired consistency.
- Season the fava with salt and black pepper to taste. Stir in the lemon juice.
- Serve warm, drizzled with extra olive oil and garnished with chopped fresh parsley.
