Ingredients

  • Romaine lettuce - 100 grams, chopped
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Bell pepper (red or yellow) - 1, diced
  • Green onions - 2, sliced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Pita bread - 1 medium, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Spread the pita triangles on a baking sheet and drizzle with 1 tablespoon of olive oil, then bake for about 5-7 minutes or until golden and crispy.
  3. While the pita is baking, prepare the vegetables: in a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomato, sliced radishes, diced bell pepper, sliced green onions, chopped parsley, and chopped mint.
  4. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  5. Once the pita is done baking, let it cool for a minute, then add it to the salad mixture.
  6. Pour the dressing over the salad and toss everything together until well combined.
  7. Serve immediately for the freshest taste.
