- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 4, thinly sliced
- Bell pepper (red or yellow) - 1, diced
- Green onions - 2, sliced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Pita bread - 1 medium, cut into triangles
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Spread the pita triangles on a baking sheet and drizzle with 1 tablespoon of olive oil, then bake for about 5-7 minutes or until golden and crispy.
- While the pita is baking, prepare the vegetables: in a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomato, sliced radishes, diced bell pepper, sliced green onions, chopped parsley, and chopped mint.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
- Once the pita is done baking, let it cool for a minute, then add it to the salad mixture.
- Pour the dressing over the salad and toss everything together until well combined.
