  • Canned white beans (such as cannellini) - 240 g, drained and rinsed
  • Spinach - 100 g, fresh or frozen
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced tomatoes, vegetable broth, and oregano. Bring to a boil.
  4. Reduce the heat and let the soup simmer for 10 minutes, allowing the flavors to meld.
  5. Add the white beans and spinach to the pot. Simmer for an additional 5-10 minutes until the spinach is wilted and everything is heated through.
