Ingredients

  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced carrot, celery, and red bell pepper, cooking for 5-7 minutes until they start to soften.
  5. Add the diced zucchini and cook for another 3 minutes.
  6. Pour in the canned diced tomatoes and vegetable broth, stirring to combine.
  7. Season with dried oregano, thyme, salt, and black pepper.
  8. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  9. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh parsley.
