- Celery - 1 stalk, diced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced carrot, celery, and red bell pepper, cooking for 5-7 minutes until they start to soften.
- Add the diced zucchini and cook for another 3 minutes.
- Pour in the canned diced tomatoes and vegetable broth, stirring to combine.
- Season with dried oregano, thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
