  • Tomato puree - 200 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish, chopped

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and dried oregano to the pot, stirring for an additional minute until fragrant.
  3. Stir in the tomato puree, allowing it to cook for 2-3 minutes, then add the drained beans and vegetable broth.
  4. Bring the mixture to a gentle simmer, then add the long-grain rice, salt, and black pepper. Stir well to combine.
  5. Cover the pot and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Once cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with fresh chopped parsley and serve warm.
