- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 400 ml
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish, chopped
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and dried oregano to the pot, stirring for an additional minute until fragrant.
- Stir in the tomato puree, allowing it to cook for 2-3 minutes, then add the drained beans and vegetable broth.
- Bring the mixture to a gentle simmer, then add the long-grain rice, salt, and black pepper. Stir well to combine.
- Cover the pot and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh chopped parsley and serve warm.
