Ingredients

  • Canned white beans - 240 grams, drained and rinsed
  • Ground turkey - 250 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato - 1 medium, sliced
  • Lettuce leaves - 4 large

Steps

  1. In a mixing bowl, combine the drained white beans, ground turkey, chopped red onion, minced garlic, chopped parsley, olive oil, oregano, salt, and black pepper.
  2. Mash the mixture slightly with a fork to combine but leave some texture from the beans.
  3. Form the mixture into two patties and place them on a plate.
  4. Heat a skillet over medium heat and add a drizzle of olive oil.
  5. Cook the patties for about 5-7 minutes on each side, or until they are fully cooked and golden brown.
  6. While the patties are cooking, prepare the toppings by slicing the tomato and washing the lettuce leaves.
  7. Once the patties are cooked, assemble the burgers by placing each patty on a lettuce leaf, topping with sliced tomato, and adding more chopped parsley if desired.
