- Brown lentils - 150 grams
- Long-grain rice - 100 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
- Add the rinsed lentils to the pot and stir for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Add the rice, diced tomato, dried oregano, salt, and black pepper. Stir well and cover the pot.
- Cook for an additional 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it rest for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
