Ingredients

  • Brown lentils - 150 grams
  • Long-grain rice - 100 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
  3. Add the rinsed lentils to the pot and stir for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Add the rice, diced tomato, dried oregano, salt, and black pepper. Stir well and cover the pot.
  6. Cook for an additional 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  7. Remove from heat and let it rest for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
