  • Green or brown lentils - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 milliliters
  • Tomato paste - 1 tablespoon
  • Bay leaf - 1
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the rinsed lentils, vegetable broth, tomato paste, bay leaf, cumin, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, or until the lentils are tender.
  6. Remove the bay leaf and adjust seasoning if needed.
  7. Serve hot, garnished with chopped fresh parsley and lemon wedges on the side.
