- Green or brown lentils - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 750 milliliters
- Tomato paste - 1 tablespoon
- Bay leaf - 1
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the rinsed lentils, vegetable broth, tomato paste, bay leaf, cumin, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, or until the lentils are tender.
- Remove the bay leaf and adjust seasoning if needed.
- Serve hot, garnished with chopped fresh parsley and lemon wedges on the side.
