  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a medium pot, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery, sautéing for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
  5. Add the rinsed lentils, vegetable broth, bay leaf, and dried oregano to the pot. Bring to a boil, then reduce the heat to a simmer.
  6. Cover the pot and let it simmer for about 25-30 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if necessary to reach your desired consistency.
  7. Season with salt and black pepper to taste, then remove the bay leaf before serving.
  8. Garnish each bowl with freshly chopped parsley and serve warm.
