Steps
- Rinse the brown lentils under cold water and set aside.
- In a medium pot, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery, sautéing for about 5 minutes until the vegetables are softened.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.
- Add the rinsed lentils, vegetable broth, bay leaf, and dried oregano to the pot. Bring to a boil, then reduce the heat to a simmer.
