Ingredients

  • Brown lentils - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 750 ml
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the diced tomato and cook for an additional 3 minutes until softened.
  5. Add the rinsed lentils, vegetable broth, bay leaf, and dried oregano to the pot. Bring to a boil, then reduce to a simmer.
  6. Cover the pot and let it cook for about 30 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
  7. Once cooked, season with salt and black pepper to taste. Remove the bay leaf.
  8. Serve hot, garnished with fresh parsley.
