Ingredients
- Brown lentils - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Vegetable broth - 750 ml
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomato and cook for an additional 3 minutes until softened.
- Add the rinsed lentils, vegetable broth, bay leaf, and dried oregano to the pot. Bring to a boil, then reduce to a simmer.
- Cover the pot and let it cook for about 30 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
- Once cooked, season with salt and black pepper to taste. Remove the bay leaf.
- Serve hot, garnished with fresh parsley.
