Steps
- In a medium bowl, crack the 4 large eggs and whisk them until well combined.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted.
- Pour the whisked eggs into the skillet with the spinach and gently stir with a spatula to scramble.
